Mason Jar Salads
This easy, healthy, flexible lunch is perfect for the school and work scramble. You can make up a jar for each family member the night before, then in the morning just grab and go! The best part is, everyone can customize their jar with their own personal favorites. Its also an excellent way to use up leftover vegetables and grains. Keeping the dressing separate from the salad keeps your meal crispy and fresh, and keeps everything from getting soggy. When you’re ready to eat, just invert your jar into a bowl and toss the dressing through the salad, or give everything a big shake, and dig in!
Serves 1
Directions:
1. Start with your dressing on the bottom of the jar, than break a crispy romaine leaf in half and use it as a barrier between the dressing and the salad.
2. Next, just pick one or two items from each category below, and layer them in a large mason jar. That’s it!
Dressing: (use something on the thicker side so it’ll stay at the bottom of the jar)
Mexican Green Goddess Dressing
Ranch Dressing
Carrot Ginger Dressing
Tahini Dressing
Greens:
Romaine lettuce
Kale
Shredded cabbage
Spinach
Arugula
Protein:
Beans or chickpeas
Hard boiled eggs
Chicken
Salmon
Tuna salad
Tofu or tempeh
Quinoa or your favorite grain
Extras:
Roasted vegetables
Nuts
Seeds
Crumbled cheese (try goat or feta- you want something on the drier side)
