Tex Mex Mashed Potatoes
These cheesy and spicy mashed potatoes bring a whole new life to the Thanksgiving classic. Everyone will be reaching for seconds when you make this recipe! To prepare in advance, spread the mashed potatoes in a casserole dish, sprinkle with cheese, and bake until warm when needed, then garnish with fresh cilantro and scallions when ready to serve.
Serves 6-8
Total Time: 35 minutes
Ingredients:
o 1 lb red potatoes, quartered
o 2 olive oil or butter
o 2 ounces canned diced green chilies
o 1⁄2 cup shredded cheddar or Monterrey jack cheese
o 1⁄4 cup buttermilk
o Salt and pepper and hot sauce, to taste
o 1 tablespoon cilantro, chopped
o 2 tablespoons chopped scallions
Directions:
1. Boil potatoes in salted water until tender. Drain, and mash with a potato masher until smooth but still with some texture.
2. Mix in the olive oil, chilies, cheese, and buttermilk, and stir well until cheese is melted. Season to taste with salt, pepper, and hot sauce. If needed, add in a little more buttermilk to reach your desired consistency.
3. To serve, garnish with scallions and cilantro, and enjoy!
