In the spirit of “Veganuary” (vegan January), I came up with this creamy and convincingly cheesy vegan mac & cheese recipe. Because sometimes, especially when it’s cold and gray out, only a big bowl of mac & cheese will do. This sauce brings to mind that notorious blue box, with its orange powdered cheese; but you can make and enjoy this recipe guilt free, and still satisfy your cheesy cravings.
