Nepalese Lentil Salad {vegan}

This recipe incorporates similar ingredients and flavors as Dal Bhat, the national dish of Nepal, but with a lighter, fresher twist. Adding raw spinach and carrots adds fiber and lutein, which boosts the health of your eyes.
